What is the whitish fog that comes out when you shoot a pneumatic?

The white fog is a water vapor cloud that has condensed in the compressed air.

When the compressed gas acts out force on the projectile, the projectile gains kinetic energy, and the air loses this energy, but in a thermal way.
When the air loses some of the thermal energy, it becomes cold.
And when air gets cold, the water in it condenses.

Dunno about you, but I get an eight foot long cloud of thick smog, which is seemingly what happens when you rapidly decompress 40 cubic inches of air at over 360 psi.
Can't wait to see what happens when I finally get to 500 psi. Twisted Evil

The muzzle blasts from the SCTBDC at 500 psi with a 3" barrel were quite impressive to see as well.

When gases expand they cool off. If they cool off enough the moisture in the gases will condense and form a cloud. It doesn't really matter much that energy (heat) was transfered to the ammo, even a dry-fired gun will give a cloud since all the energy in the compressed gases gets transfered someplace else.

The biggest drop in pressure comes just after the ammo exits the barrel. GasEq says that the decompression of 120 PSIG air that started at 80F to zero PSIG gives air at -180F. That's pretty cold.

The cloud can also be from the cold blast of air from the muzzle cooling off the air outside the gun, causing the moisture outside the gun to condense.
