Yes but the problem I see is speed. If the burst disk is holding adequate pressure (I see 40-60 psi) then the object needs to have some speed to puncture the disk.

i think where the point hits the disc will weaken it enough to break it with the amount of pressure being used(40-80psi) when any point of the burst disc is weak it will rip through the rest

Not true, quiggly17.
First of all, you need a burst disc that holds pressure. A mylar burst disc in a 1" union holds 95-105 psi before bursting.
Then you need the projectile to have a sharp point on the bottom. A needle is extremely sharp bt is too small to make the whole thing burst. A sharpened nail is usually alright.
Then, you need a projectile that fits well in the barrel, but can also slide very easily.

All three of these are pretty essential if you want the gun to fire like a mortar. A PET burst disc, for example, can hold 100 psi, but when you drop the ammo down, it pokes a tiny hole in the disc, and the pressure leaks out over a period of 5-6 seconds.
