i don't know if this has already been discussed here but whenever i make a gun or anything i just stand exactly 10 or 20 metres away from a wall and record the sound of the shot. i normally use coll edit pro but most sound programs should do it. you can then see the peak of the projectile leaving the gun and the peak of the projectile hitting the wall and see how long it takes. then speed=distance/time. It is normally fairly accurate for me.

High speed photography is starting to pick up too now that some cameras are starting to be affordable. Here is a frame of an apple and a water bottle expanding at just under 1 foot per second.
