Hey guys any one got any ideas on a high pressure valve for my new 800 psi rifle

Ball valve, butterfly valve, burst disk, piston valve, etc.
I would suggest the burst disk as it is full flow and opens pretty much instantly, which gives great performance.
Take a look in the wiki for how to make a triggered burst disk.
BTW, how are you pumping to 800 psi??? I would recommend just building a hybrid to achieve the pressures you're trying to get

Thats nothing! why would you need a hybrid, i can achive those pressures in a matter of seconds.

But it's not you who we're talking about, it's the OP get 800PSI? I assume you're getting it from a HPA source like a large CO2/Nitrogen/Helium/SCUBA tank; which are pretty expensive. Hybrids can also be more portable since you only need a small track pump and a little bottle of fuel.
On the other hand, if the OP wants a semi-realistically looking "rifle" to plink with, a pneumatic would be better than a hybrid. I only say that because it's a lot easier to increase the RPM in a pneumatic than a hybrid and if you want raw power, you're not going to waste money on making the cannon look like a rifle.

get a QEV of ebay they aren't rated for 800 but will take it quite well and if anything was to break it would be the rubber piston.

Does any one know what sort of fittings I should use for that kinda pressure ( to fill up the cylinder on my gun)

I would say steel pipes and fittings. Stainless steel or galvanized steel. They take a lot of pressure, but can be pretty expensive. You can buy them from mcmaster.com

Get fittings from a hydraulics shop....don't mess around.
x2 on hammer valve. Even if you build a "piston" valve as the main valve, finding an affordable pilot valve with a suitable rating will be impossible...and you'll end up using a hammer valve for that anyway.
