I have never understood how people attach burst disks to the to the gun
and also what would you say is the best material to make a burst disk from

Well, you can use aluminum foil stacked in layers.

use use a union and clam the foil between it then your sreaw it back together. When it burst u take the old foil and get new one and do the same
