After deciding to scale down my hybrid plans to a 6mm bore, i have to find another option for burst disk holders as cam-locks don't come small enough. so i though maybe quick release couplings such as these

Do not use a quick-connect fitting. It does not allow full flow and I highly doubt that it can properly hold a burst disk.
Use a union or some sort of cam-lock instead.

ok thanks, i found a stainless steel one along with some nice stainless fittings so i'll go with that.
