Check valve spec Q's

Cannons powered by pneumatic pressure (compressed gas) using a valve or other release.

I was looking on McMaster for check valves, I found it in the catalogue, but on the right side the price list is divided into two columns. One for a Buna-N Seat, and one for a Viton Seat. and i have no idea what they mean... any info would be greatly appreciated.

They're just 2 different types of rubber, since you're using air and not liquid it's irrelevant what the seals are made out of really.

Yep, presumably in this case it's the Buna-N
