For my new design, (This is hard to describe) I want to pass some 2" pipe through a 2" tee all the way to the opposite socket. In the same socket, I want to put a bushing. This part of the gun will be pressurized. If I glue both parts, giving each one half the tee socket, will the gun still be sufficiently safe (100 psi operating pressure)?
Yeah, we wouldn't want to anger the bees, now would we??

In order to be able to pass the pipe through the tee, the inside walls of the tee will need to be cut down (sanded). This will compromise the integrity of the tee. Top that off with putting a piece of pipe AND a bushing in the same socket (making the bushing only half fitted) and I would say you have a non-pressure rated fitting. I wouldn't do it.
Now, I could be wrong above. I may have misunderstood your intentions. Maybe a diagram is suitable?
