Yes you can use a 1 1/2" end cap piston with a 1 inch barrel.

What matters is the sealing face, or the pipe that the piston seals against when pressure is held in the chamber and pilot area. As long as the outer diameter of the sealing face is smaller than the outer diameter of the piston, it will pilot and air will release out of the barrel.

A 1 inch barrel works well with a 1 inch pipe cap turned around and sanded to fit in a 1.5 inch pipe as the valve cylinder. My Mouse musket was built this way as a coaxial instead of in a T.

It'll work as long as you have a surface for the pressure in the chamber to act upon the piston to force it back when the pilot pressure is reduced.

I only just recently (about three months) became confident with piston valves and am absolutely hooked. Their power is ridiculous and, when built right, they open incredibly fast. :D

If you were to go with a CO2 tank as a chamber, you would need to make sure you connect it with a larger diameter hose than 1/4". The flow restriction that would give you on a 11/2" valve would almost be criminal.
It might just be easier to make a PVC chamber for now. Attach it with threaded fittings so you can change your mind later.

I'll have to find a way to switch it.

For a 2'' pipe you need to use a 1.25'' endcap wrapped in tape, 1.5'' will not fit unless you turn it down on a lathe.

It may fit in the tee but are you not putting pipe in the tee?

The 1 inch pipe I assume is the barrel.
What is the 1.5 inch end cap going to be sliding on?

I guess without a sketch, I have no idea of your construction method.
