what is the best size barrel to buy 1.5 2.5 etc

Personal preference my friend, but it depends on what you want to shoot.

if you are going to shoot potatoes then 1.5inch. I have used 2inch but it is hard to find potatoes that big. Most of the ones you get in a bag will be too small.

2" works just fine for me. the small potatoes work good, too. the smartest thing to do is to get threaded adaptors, so you can use different barrels. a female on the gun, the glue a male on each barrel.
