I am no gun expert, I dont even own an air rifle but my mate told me that he used one before that was pumped to 3000psi with 8 pumps.
Airbeds... so many different uses
it could vary on caliber, type of air rifle and projectile weight. most .45 cal big bore air rifles shoot around 800fps with a 3000psi fill
Pre-charge air rifles are typically pressurised to 3000psi. Hence, they can be charged directly from a scuba bottle. A hammer hitting a small poppet valve in the end of the chamber releases a small amount of air at high pressure driving the projectile down the barrel.
This setup allows the rifle to be tuned to a certain extent...... Eg:- Heavier hammer/spring = longer dwell on the poppet valve = More power but fewer shots....A lighter hammer/spring = shorter dwell = less power per shot but more shots.
Airguns of this sort of design can be very powerful. There are photos on the Quackenbush website of a bison that was taken with a .50" cal gun! They are also used for hunting wild boar.
The momentum of the piston in a springer air rifle also generates pressures close to this before the pellet starts moving.

Typical rifles are filled to 200-240 bar (2950-3525 psi)
I fill my Daystate Mk3 to almost 3400 psi and get at least 60 shots at 800-900 feet per second (for a 0.22 1 gram pellet)
