I was wondering if i could setup a circuit using a 9 volt battery, a button, and two screws to create a spark, or is 9 volts simply not enough voltage? I would just build it and see, but I don't feel like wasting a button.

Well, let's see...
1.1 kv/mm
9 v
= .008 mm

That is a very small spark gap... but you might be able to drive a ignition coil with the battery.

Im assuming that a piezo sparker produces a somewhat high voltage but very low current? Now, an ignition coil.. define what those are? Im guessing its one of those cigarette lighter things in a car :P

A typical piezo will give you about 30,000v. And you are correct, the current is pretty low.
An ignition coil... in a car: yes. Used for lighting cigarettes: no. They are similar to flyback transformers.

Do you have any pictures of what this device looks like, because I'm honestly confused as to what it is.
